Now that we finally have some cold weather….How about some chili?? This recipe is quick, easy (especially if you buy the already chopped veggies), healthy and delicious.
- 1 large onion, chopped
- 1 clove garlic, chopped
- 1 lb. ground beef
- 1 can diced tomatoes – no salt
- 1 can tomato sauce – no salt
- 2 cups red kidney beans, cooked (optional)
- 1 tbl. Chili powder
- 1 tsp Cummin
- 1 -2 Bay leaves
- Hot sauce to taste
- Purple onion, chopped (optional)
In a large skillet, saute onions till wilted.
Add ground meat, cook till brown, about 10-15 minutes
Add the remaining ingredients and simmer.
Serve alone or with brown rice
